A catch-all for meads that don’t fit a defined style — unusual ingredients, processes, historical recreations, or combinations that span categories. By definition there is no single target profile; the honey base and overall balance are what matter. Strength and sweetness vary across the full mead range.

In the glass

Appearance
Clear to brilliant; color from very pale to deep gold depending on the honey (and any added fruit or spice).
Aroma
Honey character plus whatever the declared concept contributes, in balance.
Flavor
Recognizably mead, with the experimental or historical element evident and harmonious; balance and drinkability are the measure.
Mouthfeel
Varies with the concept; should remain balanced and drinkable.

Origin

As meadmaking has revived, producers have ranged far beyond the traditional categories — reviving historical meads, fermenting honey with unconventional ingredients, or blending approaches. This open category holds those that fit nowhere else.

Notes

Use this only when a mead matches no defined style. It spans the full strength range, from light session meads to strong sack meads.
